Description: Soft and uniform, cylindrical in shape and slightly flattened at both ends, Coppa requires careful trimming and removal of fat. It is then put to rest with juniper berries for at least 45 days to reach the right freshness and fragrance. Preparation is completed by allowing it to mature for at least five months, until a compact and uniform product is obtained, its delicate flavor becoming more refined with aging. It should be cut very thin in order to release the unmistakable sweet and aromatic scent of juniper. Enjoy it with Raclette and vegetables in oil. Conservation: Wrap in a damp cloth or wax paper and refrigerate at +2/4°C after opening.
