Description: Lardo d’Arnad is a symbol of the Valle d’Aosta culinary tradition. Obtained from pork shoulder properly cleaned of fat and cut in a square shape, it is left to mature inside "doils", old containers made of chestnut or oak wood, where the overlapping layers of lard are alternated with a mixture of salt, water, spices, natural flavorings and aromatic mountain herbs. The lard is then left to age for at least three months, during which it takes on the scent and pleasantly sweet flavor that make it so unique. Cut into thin slices and enjoy with Raclette and vegetables in oil.

Description: The 100% beef Mocetta of Valle d’Aosta is prepared exclusively with cuts coming from cattle bred and raised in the pastures of the Valle d'Aosta, a guarantee of quality and excellence. The meat is left to macerate for at least twenty days together with mountain herbs, salt, spices and natural flavorings, and then left to dry for a period varying from one to three months depending on the size of the cut. It’s considered a very special dish, ideal when cut into thin slices. Serve it as an appetizer with Raclette and vegetables in oil!

Description: Fumin is a native Valle d’Aosta grapevine. Mallow red in color, strong and almost impenetrable, its fragrance is intense, persistent and typical of wine, with strong notes of fruit preserves and berries on a spicy licorice background, harmonizing well with the slight smoky scent of aging wood. Taste is dry, full, soft, rich in body and structure and with a pleasant final flavor of austere and soft tannins. Description: Undisputed symbol of the Valle d'Aosta, Fontina dates as far back as 1270. A semi-hard fatty cheese, made exclusively from whole raw milk from Valle d'Aosta purebred cows. Crust is compact, thin and slightly brown, enclosing a semi-cooked, springy and dark texture. Flavor is sweet and the fragrant aroma is enhanced with aging.
