Description: Lardo d’Arnad is one of the symbolic products of the Aosta Valley gastronomic tradition. It is obtained from the processing of the pork shoulder which, properly degreased and then squared, is placed to mature in "doils", ancient containers made of chestnut or oak wood, inside which, the layers of lard superimposed until filling, alternates a mixture composed of salt, water, spices, natural flavors and aromatic mountain herbs. Here the lard is left to mature for at least three months and during this period it acquires the pleasantly sweet aroma and flavor that make it a unique product. Cut it into very thin slices and enjoy it with the Raclette and vegetables in oil.

The flavor is dry, full, soft and rich in body and structure, with a pleasant finish of soft and austere tannins.

Description: Undisputed symbol of the Valle d'Aosta, Fontina dates as far back as 1270. A semi-hard fatty cheese, made exclusively from whole raw milk from Valle d'Aosta purebred cows. Crust is compact, thin and slightly brown, enclosing a semi-cooked, springy and dark texture. Flavor is sweet and the fragrant aroma is enhanced with aging.
