Description: This delight is obtained by using the whole muscle of the pig's dorsal part. In addition to the classic mixture of salt, black peppercorns, juniper, white pepper and nutmeg, a preparation of Provence herbs is added that characterize the product. To best enjoy this specialty, we recommend serving it seasoned with a drizzle of extra virgin olive oil, to enhance its flavor and softness.
