Description: “Strolghino” is a small salami typical of the Parma area. Unlike other sacked products, Strolghino can be eaten young after a few days of seasoning. It is derived from the trimming of the thin pieces of Culatello, which gives the meat perfume and sweetness. Processing involves the grinding and insertion of meat into the animal gut. After about twenty days of aging, Strolghino is ready to be sliced. It is perfect as an aperitif: cut into slices of one centimeter, it goes well with a few Parmigiano Reggiano scales and a slightly sparkling white wine. Conservation: Wrap in a damp cloth and refrigerate at +2/4°C after opening, to preserve its softness.
