It is a food obtained from drying and salting of mullet eggs, according to specific and traditional processes. The cephalopod (or mullet), once caught, is deprived of the egg-containing sack which is subsequently salted, dried, pressed and seasoned.
The grated version is used as a pasta dressing, giving a unique taste to your plate!
