Bottarga is a food obtained from the drying and salting of mullet eggs according to specific and traditional procedures. Once caught, the mullet (or mullet) is deprived of the bag containing the eggs which is then salted, dried, pressed and cured. In Sardinia it was common to consume bottarga as an appetizer or as a condiment for pasta, grated as it is done with cheese, giving life to the recipe for “spaghetti alla bottarga”.
